Vanilla Layer Cake with Meyer Lemon Sugar Fruit and Whipped Topping
(Note: Four (4) Nordic Ware Celebrations Layer Cake Pans are used in this recipe)

Ingredients for Yellow Cake:
1 cup butter, softened
1 1/2 cups granulated sugar
2 1/2 teaspoons baking powder
3/4 teaspoon kosher salt
1 tablespoon vanilla extract
4 large eggs, room temperature
3 cups King Arthur Unbleached Cake Flour
1 cup whole milk

Toppings: Fresh fruit such as blueberries, strawberries and raspberries.

Preheat oven to 350 degrees.

Prepare cake pans by lightly spraying with a flour-based spray. Set aside.

Beat together butter, sugar, baking powder, salt and vanilla on medium-high speed until pale and fluffy, about 3 minutes.

Add eggs, 2 at a time, beating until thickened. Scrape the bowl after each addition. Mix in half the flour, then the milk (the mixture will look curdled). Add remaining flour and beat to combine.

Pour the batter into the prepared pans. Bake on the middle and rack bottom racks of oven. I baked for 20 minutes and let cool, on cooling racks, for 10 minutes.

Meyer Lemon Sugar (for the Blueberries)
(Note: this makes one batch but you will not use the entire batch)!

1 cup granulated sugar per every Meyer Lemon used


Place sugar in a bowl and zest lemon directly into the sugar. Massage the zest into the sugar until incorporated.

Place the mixture on a parchment-lined baking sheet and bake at 200 degrees for approximately 10 minutes. Make sure to spread your mixture out into a thin layer. Your sugar/zest combination should be hard once “dehydrated.”

Remove from the oven and cook until it’s soft to the touch. Place in a mixing bowl and, using your hands, break pieces up and continue to massage until you are left with what resembles regular sugar.

Place in an air-right container and store in a cool, dry place.

For the blueberries, wash and gently shake the blueberries, mostly dry (you still want them little wet so the sugar sticks to the berries). In a small bowl, add desired amount of blueberries and gently mix in Meyer lemon sugar. Toss until fully coated. Set aside.

Wash and dry raspberries and set aside.

Slice strawberries and set aside.

Homemade Whipped Topping (with a hint of lemon)

Ingredients for the Whipped Topping:
2 cups heavy whipping cream
1/2 cup granulated sugar
1 teaspoon pure lemon extract

*If you prefer a lot of whipped topping, simply double the recipe.


In the bowl of a stand mixer, combine all ingredients and (using the whip attachment), whip on medium to medium-high speed, until light and fluffy. Refrigerate until ready to use.

To assemble:
Place a layer of cake on a cake stand, add whipped topping. Repeat until you are left with the top layer covered in whipped topping.

Add fruit in your desired design. Refrigerate until ready to serve.
