Recipe by Angela D. Kudlets
Your Next Great Dish
2 boneless, thick-cut pork chops, trimmed
1 crown broccoli
1 large carrot, peeled
6 ounces Teriyaki sauce, divided*
2 tablespoons olive oil
Rice, your choice
Slice pork to your preference and set aside. Once carrot is peeled, use the peeled to peel large pieces of carrot. Then, slice carrot in half width-wise and then lengthwise. Trim broccoli and cut to your preference.
Prepare rice as directed on package. Keep warm.
In a large saucepan, fully cook pork and set aside. In a medium saucepan, add olive oil, broccoli and carrots with 3 ounces teriyaki sauce. Cook until carrots are al dente.
Once the carrots and broccoli are finished, add the pork and combine. Add additional 3 ounces teriyaki sauce and stir. Simmer until sauce is heated.
Serve with rice.
*I used Soy Yay Veri Veri Teriyaki sauce which I am able to find at Kroger on a regular basis. Of course, you can also make a homemade teriyaki sauce if you prefer.
