Homemade Marshmallows and Hot Cocoa

3 tablespoons unflavored gelatin powder
1/3 cup cold water
3 cups granulated sugar
1 1/2 cup water
1 1/2 teaspoons vanilla
1/3 cup cornstarch
1/3 cup powdered sugar
In a small bowl, soak the gelatin in 1/3 cup of cold water. Set aside for 10 minutes to allow the gelatin to
In a large saucepan dissolve the sugar and 1-1/2 cup of water over low heat, stirring constantly.
Add the gelatin mixture to the dissolved sugar water and mix until the gelatin is fully dissolved.
Raise the temperature to a boil (but not a high, rapid boil).
Boil steadily for 15 minutes without stirring.
Add the mixture to a stand mixture and, using the whip attachment, start slowly and increase speed
whipping the mixture until it’s very thick and white.
Spray a 9×13 pan (or 9×9 for thicker marshmallows) with Baker’s Joy and pour the mixture in the pan.
**I also lined my pan with a piece of parchment paper.
Let set completely, about 2 hours.
Cut into squares and dust with a mixture of cornstarch and powdered sugar. *I found that I did not use
all of the cornstarch/powdered sugar the recipe called for, so you could reduce by half and make more if needed.
