Firecracker Chicken Meatballs

Makes 45-50 meatballs

Ingredients for Meatballs

For the Meatballs
1.75 – 2 pounds ground chicken
4 teaspoons minced garlic
1 1/2 teaspoons salt
1 teaspoon black pepper
2 large eggs
1 cup Panko breadcrumbs
1/2 teaspoon paprika
1 teaspoon onion powder

Ingredients for Firecracker Sauce
1/2 cup Frank’s Hot Sauce
1 cup light brown sugar
2 tablespoons apple cider vinegar
1/4 teaspoon salt
1/4 to 1/2 teaspoon red pepper flakes (depending on the heat level you want)

Position two racks near the center of the oven and preheat to 475 degrees. Line 2 baking sheets with parchment paper and set aside.

In a saucepan, combine the ingredients for the firecracker sauce over medium-high heat and allow to come to a boil. Reduce the heat so it simmers and simmer for 8-10 minutes. Remove from heat and let sit. The sauce will thicken as it cools so don’t worry if it seems too thin.

In a large bowl, combine the ground chicken, garlic, salt, pepper, eggs, panko breadcrumbs, paprika and onion powder. Use your hands to mix so that you don’t overmix which makes the meatballs drier.

Shape the meat into balls (approximately 3 tablespoons). Place on parchment paper lined baking sheets and bake for 11-13 minutes.

Dip each meatball into the firecracker sauce and bake an additional 1-2 minutes. Drizzle with brush or additional sauce if desired.

Cook’s Note: I decided to bring these to work so, after the initial 11-13 minutes of baking, I added the meatballs and sauce to a crock pot. I also made a double batch of sauce for the crock pot.
