Cauliflower Mock Potatoes

Serves 4

4 1/2 cups cauliflower, chopped
1/4 teaspoon fresh garlic, minced
2 tablespoons heavy whipping cream
2 tablespoons butter, unsalted
1/3 cups organic chicken stock
3/4 teaspoon kosher salt
coarse ground black pepper, to taste

Chop cauliflower into medium size chunks and place in the steamer insert over boiling water. Once fully cooked (fork tender) remove from steamer insert and add to a food processor. Add remaining ingredients and pulse until smooth. Serve immediately.
