Cast Iron Sirloin with a drizzle of Cherry Balsamic Reduction

Ingredients
6-ounce sirloin
1 tablespoon unsalted butter
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup cherry balsamic vinegar *

Directions
In a saucier, or small saucepan, add 1/2 cup of cherry balsamic vinegar and simmer to reduce by half, making 1/4 cup reduction*. Set aside.

Salt and pepper a 6-ounce sirloin, trimmed of fat, in a cast iron skillet on medium-high heat. Sear on both sides and add 1 tablespoon unsalted butter, reduce heat to medium and cook to your preferred temperature (pictured: medium).

Plate and drizzle the cherry balsamic reduction on top and serve.
