Best-Ever Pancakes

¾ cup whole milk
2 tablespoons distilled white vinegar
1 cup all-purpose flour
2 tablespoons Steviva Blend
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon kosher salt
1 large egg
2 tablespoons butter, melted

Pre-heat skillet or griddle to medium to medium-high heat. You want the skillet, or griddle, At medium-high heat.

Combine the milk and vinegar in a 2-cup measuring cup or small mixing bowl. Set aside for approximately 10 minutes to allow time for the milk to “sour.”

Place butter in a sauce pan on low heat and melt. Let stand, off of heat, once fully melted.

Combine the flour, sugar, baking powder, baking soda and salt, in a large mixing bowl. Using a whisk, combine dry ingredients. Whisk egg into the “soured” milk and then, slowly, incorporate the melted butter into the milk and egg mixture making sure to whisk rapidly so that the eggs do not begin to cook.

Pour the wet mixture into the dry ingredients and whisk until fully combined. Be sure not to
overmix. Your batter will be thick and have a lot of bubbles on the surface of the batter.

In this recipe, I used Steviva Brands, Steviva Blend Natural Sugar Substitute.
