Banana Bread

Makes 1 loaf or 4 mini-loaves

1 cup sugar
2 eggs, beaten
4 very ripe bananas, completely mashed
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon pure vanilla extract

Preheat oven to 350 degrees.

Using a hand mixer, or stand mixer, cream together the butter and sugar. Add the eggs and mashed bananas. Sift together flour, baking soda and salt. Add to creamed mixture. Combine well. Add vanilla.

Pour into greased and floured loaf pan. (I used stoneware mini loaf pans and baked for 45-50 minutes).

Bake at 350 degrees for 60 minutes.

Let cool completely before removing from loaf pan and serving.

Optional: 1/2 cup finely chopped walnuts (add to batter after vanilla and combine).
