Preheat oven to 325 degrees.
1-pound maple bacon
1/4 cup dark brown sugar, packed
1/8 cup dark corn syrup
With a small silicone basting brush, lightly brush corn syrup on one side of the bacon and them press the brushed side into the brown sugar so that it adheres to the bacon. Turn bacon over and repeat. Place each piece of coated bacon on a wire rack with a drip tray underneath. You can also use a broiler pan and lie the pieces flat across the vents (remember to keep the top, and bottom pieces of the broiler pan together).
Do this for the entire batch of bacon.
Bake for 30 minutes. Place on a cooling rack and let brown sugar set (approximately 20 minutes).
Enjoy alone or crumbled on top of your favorite salad, ice cream or frozen yogurt.
